Cowboy Cookie Energy Balls

INGREDIENTS

● 3 cups Gluten Free Rolled Oats 

● 1 cup shredded unsweetened Coconut 

● 1 cup Dark Chocolate Chips

● 1½ cups Almond Flour 

● 1½ cups Adams Natural Peanut Butter 

● 3 teaspoons Vanilla Extract 

INSTRUCTIONS 

1. Combine oats, coconut, chocolate chips and almond flour in large bowl and stir to combine.

2. Add peanut butter and vanilla extract and stir to fully incorporated and looks like a dough. If you have stand mixer, you can use it. Place in refrigerator for at lease 30 minutes.

3. Remove from refrigerator and roll into 1-1.5 inch balls and place on a cookie sheet with parchment paper liner. Freeze for 20-30 minutes and then transfer into container of your choice. Keep in refrigerator or freezer for up to 6 weeks.
