Lamb Chops with Mint Yogurt Sauce

MINT YOGURT SAUCE

  • ● ¾ cup 1% Greek yogurt 

    ● 1 tsp extra-virgin olive oil 

    ● 1 tsp fresh lemon juice 

    ● 2 TBSP finely chopped fresh mint 

    1½ TBSP finely chopped fresh chives 

    ½ tsp kosher salt 

    Freshly cracked black pepper

LAMB CHOPS 

● 8 lamb loin chops, 3.5 oz each, fat trimmed 

● 1 tsp kosher salt 

● ½ tsp freshly ground black pepper 

● 2 TBSP fresh lemon juice 

● 4 garlic cloves, crushed 

● 1 TBSP fresh rosemary 

● ½ tsp dried oregano 

● Cooking spray 

INSTRUCTIONS

1. For the mint yogurt sauce: In a medium bowl, combine the yogurt, olive oil, lemon juice, mint, chives, salt and black pepper to taste. Cover and refrigerate for a few hours to let the flavors develop. 

2. For the lamb chops: season both sides of the lamb chops with salt and black pepper to taste. Place the chops in a large bowl and pour the lemon juice over them. Add the garlic, rosemary and oregano. Cover with plastic wrap and marinate at room temperature for 1 hour, or as long as overnight in the refrigerator. 

3. Preheat the grill to medium-high (or preheat a grill pan over medium-high heat). Oil the grill grates or spray the grill pan with oil. Grill the chops until a thermometer registers 145℉ for medium-rare or higher to your taste, 4-6 minutes on each side. 

4. Serve the lamb chops with the mint yogurt sauce on the side.
